Any Weather Soup

Whether you're stuck inside or witnessing beautiful weather, this lentil soup will make your day. I like to think about it as a soup and salad combo in 1! Slice up the white and green parts of 2 leeks and cook them in 3 tbsps in a medium pot until tender. Add 8 cups of chicken (or vegetable!) stock and 2 peeled Yukon Gold potatoes. Simmer until the potatoes are tender. Trim 1lb snap peas, chop 2 romaine lettuce hearts and add both things to the pot. Simmer until the mixture turns bright green and then blend it up in batches with 3 tbsps fresh tarragon till it's nice and smooth. Once blended, bring it back to the pan and stir in 1/3 cup buttermilk. Salt and pepper to taste! Enjoy and stay warm out there!!
